LEMON STUFFED PLAICE

Serves 4 Sin Free on Original, 8 on Green

(Use Plaice as a healthy extra on green and deduct 6 sins per serving)

Ingredients:

Grated rind and juice of 1 lemon
227g/8oz very low fat natural fromage frais
113g/4oz peeled prawns
4x 170g/6oz fillets of plaice
Salt and ground black pepper
1 Tablespoon chopped fresh parsley
Cooked asparagus spears, to serve

Method:

Before preparing the stuffing, preheat the oven to 150c/300f Gas mark 2.
Put the lemon rind and juice in a bowl, add the very low fat fromage frais and prawns, and mix well together.
Cut each fillet of plaice in half. Put a spoonful of the prawn mixture on each fillet and roll up. Place the stuffed fillets in a baking dish, season lightly with salt and pepper and cover with kitchen foil.
Cook in the preheated oven for 20 minutes, or until the plaice is cooked. Serve, sprinkled with parsley, with asparagus spears.
