LEMON CHEESECAKE

Serves 4 

3 Sins for a 1/4 of the cake

Ingredients:

8 Ginger Thins (8 sins)
2 Tubs Quark
3 eggs
4 Heaped Tablespoons Canderell
1 oz raisins (4 sins)
Zest of 1 Lemon
2 Tablespoons of Lemon Juice


Method:

Crush Biscuits and place in bottom of tin with a removable bottom.
Beat together the eggs, quark and canderell.
Add raisins, zest of lemon and lemon juice.
Pour mixture over biscuits.
Cook at Gas 4 for 40mins.
Turn oven off and leave for a further 1 hour.
When cool put in fridge.

Serve with some fresh berries.
