CHICKEN TIKKA

Serves 4 Sin Free on Original

 

Ingredients:

4 Skinless, boneless chicken breasts

½ tsp salt

4tbsp lemon or lime juice

Fry light

 

Marinade:

150ml/5 fl oz low-fat natural yogurt

2 garlic cloves crushed

2.5-cm/1-inch piece fresh root ginger, grated

1 tsp ground cumin

1tsp chilli powder

½ tsp ground coriander

½ tsp ground turmeric

 

Sauce:

150ml/5 fl oz low-fat yoghurt

1 tsp mint sauce

 

Method:

. Cut the chicken into 2.5cm/1-inch cubes. Sprinkle with salt and citrus juice. Set aside for 10 minutes.

2. To make the marinade, combine all the ingredients in a small bowl until well mixed.

3. Thread the cubes of chicken on to skewers. Brush the marinade over the chicken. Cover and set aside to marinate in the refrigerator for at least 2 hours, preferably overnight. Cook the chicken skewers under a medium grill spraying with fry light and turning frequently, for 15 minutes or until cooked through.

4. Meanwhile, combine the sauce ingredients. Serve with the chicken.
