ANNE'S MASHED SQUASH

Sin Free on Red

Ingredients:

Chopped onion
Sliced leek
Chopped bacon
Butternut squash

Method:

1. Boil the butternut squash imagining it is going to be mashed Potato.
2. Fry the onion & leek in a pan along with the bacon, add the mashed squash,
season well and serve with your favourite red day meal.

ANNE'S GREEN DAY RISOTTO

Ingredients:

Chopped onion, leek, garlic & mushrooms.
8oz (dry) risotto rice
1.5 pints chicken stock (made from the jar variety coz u know it makes
sense)
big dollop of fromage frais
season to taste


Method:

1. Fry all the chopped ingredients together, add rice and cook for 2 minutes.
add the stock and simmer for 20 minutes.
2. Stir in the fromage frais, warm through and serve. Season as you go.

Menu Suggestion:

Serve on its own on a green day or add a healthy extra portion of chicken to add a bit of meat.
